Tomato Pasta Sauce Canneloni Style

2 tbs olive oil
400g tin chopped tomatoes (Annalisa brand works). I often prefer San Marzano whole tomatoes
1 brown onion, peeled and finely diced or minced
1 tbsp tomato paste
1tsp sugar
pinch of salt
2 tbsp fresh basil, finely chopped

Heat oil in a large frying pan.

Add the onion and cook over medium heat for5-8 minutes. Add the garlic and stir. Remove from heat.

Add the tomato, tomato paste, sugar, 125ml (1/2 cup) water and salt.

Simmer for 20 minutes, or until the mixture thickens slightly.

Stir in the basil.

Cover until needed. The longer you leave the sauce covered, the better it gets.
