Baked Broccoli and Cheese Balls
2 cups broccoli stems, washed and roughly chopped and steamed and cooled for 15 minutes
1 cup breadcrumbs
2 eggs
1 cup grated cheddar cheese
4 spring onion, washed, topped and tailed and roughly sliced
2 cloves garlic, crushed
Preheat the oven to 190 degrees celsius (fan-forced).
Place broccoli, spring onion and garlic in the food processor, Pulse until chopped but not mushy.
Combine broccoli mixture with beaten eggs, cheese and breadcrumbs in a large bowl and mix well to combine.
Using wet hands, shape 1-2 tbs on mixture into walnut sized balls.
Place the balls on a baking tray lined with baking paper.
Spray the balls with olive oil spray.
Place in the oven and bake for 20-25 minutes or until golden brown.
Allow to cool.
Serve with hummus.
