Beef Chitarnee
1 kg blade or chuck steak
1/2 cup vegetable oil
1 kg onions, finely chopped
1 red capsicum, finely chopped
1/2 tsp salt
1 tsp grated ginger
2 garlic cloves, crushed
2 tbs ground coriander
2 tsp ground cumin
1 tbs sweet paprika
1 tsp garam masala
1/2 tsp ground turmeric
1/2 tsp ground black pepper
400g can chopped tomatoes, or 500g ripe tomatoes, chopped
140g tomato paste
1 tbs sugar
1/2 cup brown vinegar
6 fresh curry leaves
cut the beef into 5 cm pieces and set aside.
heat the oil in a frying pan and fry the onions, capsicum and salt on a medium heat for 10-15 minutes until the onions are golden brown.
add the ginger and garlic and cook for a few minutes, stirring.
add the meat and all of the spices and brown the meat well.
add the tomatoes and tomato paste and cook for about hours or until the meat is tender.
stir through the sugar, vinegar and curry leaves and cook for a further 5 minutes.
