Bolognese (quick) Gordon Ramsay Style
Good. You tube video. And here is a take on it instructions aren’t quite right but ingredients are.
• 1 Onion
• 1 Carrot
• 2 Garlic Cloves
• 1 Tablespoon Dried Oregano
• 2 Canned Tomatoes or 2 Freshly Chopped Tomato
• 400g / 14 OZ Minced Beef
• 1 Tablespoon Tomato Puree (https://amzn.to/2GjQfcP)
• Red Wine ( no need to break out the expensive stuff! A simple Merlot will do )
• Worcestershire Sauce (https://amzn.to/2DRFrRI)
•
100ml / 3 OZ of Full Cream Milk
1 Get a non-stick frying pan on high heat and add a tablespoon of Olive Oil
2 Add the grated onion and carrot into the pan and using a ladle , get the pan moving as you sweat off excess moisture, you’d want to form somewhat of a puree that adds a little body and enriches the bolognese sauce.
3 Lightly add some seasoning ( salt and pepper ) to the grated onion and carrot mixture
4 Crush 2 cloves of garlic using the crusher (if you do not have a garlic crusher, use the back of your knife and place the garlic clove underneath the blade and pound on the blade and dice it after into smaller pieces) and add it into the frying pan.
5 Add in your dried Oregano
6 Get your frying pan active using the ladle , the point is not to brown the vegetables but to lightly sweat it off.
7 Use the ladle to make a little well in the center of the frying pan and add in your minced beef and quickly get it moving in the pan.
8 Once the mince has sweated off, create the little well in the center of the frying pan again and add in your tomato puree. This gives the bolognese a tangy taste ( slightly acidic taste ), which is all too familiar with bolognese!
9 Add in your Red Wine, now the amount to add is completely arbitrary and I’d almost say to hazard a guess as to how thick you’d like your sauce to be and it’s your prerogative to add in as liberally as you’d like!
10 Lower the heat and reduce the Red wine to a syrup which would give your sauce more body and strengthen its flavor profile
11 It’s time to add in your chopped tomatoes and fold them into the awesome goodness you’ve created in your pan.
12 Add in your Worcestershire sauce , that gives your bolognese a little heat and spice whilst darkening the minced meat.
13 Let the mixture simmer for 5-6 minutes
14 To give your bolognese a little more enriched flavor, add in your full cream milk
