No Mac and Cheese
1/2 head of cauliflower, washed and roughly chopped
2 tbs butter
2 tbs plain flour
500ml milk
pinch of nutmeg
3/4 cup cheddar cheese, grated
1/3 cup parmesan cheese, grated
1/3 cup mozzarella cheese, grated
salt and pepper to taste
Preheat oven to 200 degrees celsius (fan-forced)
Briefly pulse the cauliflower in the food processor, to break up the cauliflower into roughly pasta shaped pieces (about 5-7 pulses). Scoop the cauliflower into a baking dish.
Melt the butter in a medium saucepan.
Add the flour and stir to combine.
Cook on medium-high heat for 2 minutes, stirring constantly.
Add half the milk and stir to break up lumps.
Add remaining milk and stir to combine.
Bring to the boil, stirring constantly and continue to boil for 2-3 minutes until the sauce thickens.
Add nutmeg and stir to combine.
Add salt and pepper, to taste.
Add 1/2 cup of the chedddar cheese and stir to combine and melt the cheese.
Pour the sauce over the cauliflower and stir well to combine.
Sprinkle remaining cheeses over the top and place the baking dish in the oven.
Cook for 18-25 minutes, or until golden brown.
Serve as you would mac and cheese.
