Cauliflower Cheese

The pan pizza method of covering with cheese and blasting at high temperature work well and the cheese melts to the sides of the baking dish.

1 medium cauliflower, washed and broken into florets
500ml milk
slightly less than 1/2 cup plain flour
60g butter
salt and pepper
nutmeg, fresh grated or ground
1 cup cheddar cheese, grated
3/4 cup parmesan cheese, grated
1/4-1/2 cup mozarella cheese, grated

Preheat oven to 200 degrees celsius.

Steam cauliflower

Warm the milk in a saucepan

Place butter in a separate medium saucepan, melt butter over medium heat

Add the flour and whisk rapidly to make a smooth butter and flour paste.

Continue to stir the floury butter over the heat for a few minutes to cook the floury taste away.

Start whisking in the warm milk a slosh at a time.

Whisk continuously.

Add salt pepper and a pinch of nutmeg to taste.

Bring the sauce to a solid simmer and simmer for 3-5 minutes, whisking continuously.

Place cauliflower in a baking dish and cover with bechamel sauce.

Sprinkle cheeses over the top and bake for 20- 30 minutes or until golden and bubbling.
