Chicken Kofta Wrap

1kg chicken mince

150g feta cheese, crumbled or cubed. Marinated feta works particularly well.

1 egg

2 tbs breadcrumbs

1/2 tsp salt

pinch of ground black pepper

6 spring onions, washed and finely sliced (white part only)

1 large bunch of dill, washed and chopped

1 tsp dried oregano

zest of 1 lime

combine all ingredients well and let sit for at least one hour in the refrigerator, the longer the better.

roll into medium sized balls with wet hands and fry in olive oil until browned on all sides and cooked through.

works well served on a wrap with tzatziki or peeled cucumber and lebanese potato.
