Chicken schnitzel , 8 pieces, fried until golden, I place the chicken on a cake cooling rack after it is cooked to allow it to cool without becoming soggy.
Turkish bread rolls, 4
Iceberg lettuce, 1 cup, washed and shredded
Avocado, 1, sliced length wise.
Green goddess sauce, 1 batch
Do
Slice open the roll or turkish bread.
Place two pieces of chicken schnitzel on the bread.
Place a good amount of avocado over the chicken.
Drizzle 1 desert spoon of green goddess sauce over the chicken. I often add a tiny sprinkle of salt over the sauce at this point.
Sprinkle over some lettuce.
Close the sandwich and serve.
Try this with crumbed zucchini and provolone cheese for additional flavour and variety.
