Easy Pizzette

A flexible recipe, depending on your time constraints, these soft, reliable pizzettes always satisfy. Vary the toppings to please your crowd.

Yield: 6 - 8 pizzettes, depending on size.

Cooking Time: 15 minutes

Total Time: 30 minutes to 90 minutes.

Hacks: Minimise the rising time, the results are still good.

1 quantity fast pizza dough recipe 1 (ingredients 500g plain flour, 2 tsp dry yeast powder, 1 1/2 cups water)
3/4 cup tomato passata (Mutti brand works very well)
Good olive oil
salt
1 ball mozarella cheese, drained and chopped or grated
basil leaves, washed

Make the dough according to the recipe above.

Divide the dough into 6 portions and roll into balls using wet hands.

Roll or press or stretch out the dough with slightly wet hands into small pizzette rounds ( a pizzette is a small pizza). I find 10cm diameter pizzetttes work well. Place each dough round onto a slightly oiled baking tray.

Allow to stand, covered with a clean cloth or plastic bag, for 1 hour if you have the time, if not go straight to the next step or let it rest for as much time as you can allow. If you allow the dough to stand for more than an hour, even up to two hours, you end up with a deep pan pizza effect as the oil in the pan soaks into the dough. If you are standing the dough for a long time, spread some tomato sauce over the dough beforehand to prevent the dough from drying out.

Preheat the oven to 200 degrees celsius (fan-forced).

Combine the passata with a drizzle of olive oil and salt to taste.

Spread the sauce over each pizzette, top with mozarella and 1 or 2 basil leaves. Drizzle a little more olive oil on the baking tray and bake in the oven for 10 minutes. At the 10 minute mark, pour a little more oil on the pizza tray and jiggle it around so that it reaches each pizzette. Return the tray to the oven for another 2 minutes or until the base is crisp and the cheese has browned.

Try this with a very finely sliced mushroom on each pizzette in addition to the tomato sauce..

Or Try this with finely diced green capsicum, grated mozarella, mushroom, and diced pineapple in addition to the tomato sauce.
