Fast Pizza Dough Recipes
Recipe 1
5g yeast powder
1 1/2 cups lukewarm water
500g white bakers flour (also referred to as bread flour, I use Lauke Wallaby Bakers Flour), if you use pizza flour or 000 flour, add at least an additional 1 tbs of water
2 tsp kosher salt
Dissolve the yeast in lukewarm water.
Combine the salt and flour together in a bowl.
Pour the yeast mixture into the flour mixture and stir in circles with the handle of a wooden spoon until the mixture resembles a shaggy dough.
Lightly flour a clean work bench and tip the dough onto the work bench.
Knead the dough for 2 minutes or so and leave to sit for 5 minutes.
Knead the dough for another 2 minutes using slightly wet hands and cover the bowl and allow to rest for 10 minutes.
The dough is now ready to use, this one works very well for Pizzettes.
Recipe 2
2 cups (240g) plain flour
1 tsp dried yeast powder
1/2 tsp salt
1 tbs sugar
2/3 cup warm water, plus additional as required
Mix 1 cup flour with remaining ingredients.
Gradually add remaining flour and and mix with the handle of a wooden spoon (copy the circular motion of the dough hook on your cake mixer) until the dough forms a ball. At this stage, you will end up with a bit of a shaggy dough. This is normal.
Use your hands to briefly knead dough. The short kneading process will speed up the hydration of the flour and will enable the gluten to lengthen and strengthen both of which will give your dough a lovely elasticity. Just 1-2 minutes of kneading is plenty for this recipe.
Leave the dough to rise in covered bowl in a warm spot for 15 minutes. ( You can get away with not doing this if you are short on time).
Preheat the oven to 180 degrees celsius (fan-forced).
Flatten the ball into a disc and gently stretch the outer edges to begin to spread the dough into a shape the size of your pizza pan.
Oil your pizza tray and Spread the dough to the edges of the tray by pressing down on it with slightly oiled or damp hands.
Add your favourite toppings and bake in the oven for 15 - 20 minutes or until golden and the base is has a crisp crust.

Remember that salt kills yeast, get the yeast to germinate with water and sugar before adding the salt for very fluffy pizza dough.
