Green Goddess Sauce
1 cup each flat-leaf parsley, coriander, basil, dill and mint leaves
1/2 garlic clove, roughly chopped
Juice of ½ lemon
200g very good mayonnaise (Hellman’s brand is my favourite)
Thoroughly wash herbs and gently dry.
Place all ingredients in the food processor and process until smooth and combined. (3-4 minutes.)
You can change the flavours based on what you are pairing this with. For example, if you are pairing it with Mexican food, add more coriander. If you are serving it with a chicken schnitzel panini, add more basil.
Try this with chicken schnitzel, burgers, falafel or just about anything.
