Kale Salad 3
Buy or find
Red onion, peeled and thinly sliced
Limes, 2, juiced
Kale, 2 cups, washed and chopped into small pieces
Red cabbage, shredded
Beetroot, 1, raw, grated
Chickpeas, canned, 3/4 cup, rinsed
Coriander leaves, 1/4 cup, washed thoroughly and finely chopped
Feta, 1/4 cup, crumbled
Pumpkin seeds, 1/4 cup
Olive oil for dressing
Red wine vinegar, for dressing
Kosher salt, to taste
Avocado, 1, cubed

Soak the onion in the lime juice for at least 60 minutes.
Add kale to a large salad bowl and massage 1 tbs olive oil and a good squeeze of lemon juice into the kale leaves. Leave to sit for 15 minutes to soften the leaves.
Add cabbage, beetroot, chickpeas, onion, coriander, feta, pumpkin seeds to the salad bowl with the kale.
Dress the salad with oil and red wine vinegar and salt to taste.
Add avocado.
Serve
