Kasha Varnishkes style caramelised onion
2 brown onions, peeled and diced
4 tbs good olive oil
salt and pepper to taste
Heat the olive oil in a frying pan over medium heat.
Add the onion and salt and pepper to taste.
Cook for 30-40 minutes until the onions have caramelised. Reduce the heat as required.
The combination of pepper and olive oil is important in this dish, the peppery fruitiness when you get it right, is delicious.
