Loaded Fried Rice

Buy or find
Jasmine rice (cooked), 1 1/2 cups
Brown rice (cooked), 1 1/2 cups
Cauliflower rice, 1 cup
Broccoli rice, 1 cup
Wombok cabbage, 1 cup, shredded
Flavoured tofu, 300g, sliced and fried
Eggs, 5, whisked and fried like a unfilled omelette
Brown onion, 1, diced
Spring onion, 3, sliced
Fresh ginger, 1 tsp, grated or finely diced
Soy sauce, a splash
Fresh mint and coriander leaves, a handful of each (don’t overdo the coriander it can overpower)
Oil for frying

Do
Fry onion in oil on medium heat until soft.

Add rice and fry until heated through.

Add cauliflower rice and broccoli rice. Fry until well heated and beginning to brown.

Add cabbage and fry until beginning to wilt.

Add spring onion and ginger and fry for 2-3 minutes.

Add egg and tofu, stir and fry until well warmed.

Add soy and herbs and toss.

Serve
