Buy or find
Selection of vegetables, including, broccoli, carrot, sweet potato, potato, green beans
Olive oil for roasting
Spice mix, turmeric, onion powder, garlic powder, pepper, salt and paprika
Chickpeas, 400g can, rinsed and roasted with Ras el hangout for 20 minutes at 180 c
Couscous, 1 cup, prepared according to packet instructions
Dressing, such as vegan green goddess
Protein such as bbq chicken or tuna

Do
Preheat
oven to 180 degrees celsius, fan-forced.

Chop vegetables into 4cm pieces, leave skin on potato and sweet potato.

Line a baking tray with baking paper. you may need two trays depending on your chosen quantity of vegetables.

Place vegetables on the trays and sprinkle with spice mix.

Drizzle with oil and roast for 60 minutes.

Serve vegetables with remaining ingredients.
