Martha Stewart’s Sweet Potato, Celery and Apple Salad
Buy or find
Lemon juice, 2 tbs
Ginger, 1 tbs, fresh, peeled and grated
Olive oil, 2 tbs
Salt and pepper, to taste
Sweet potato, 250g, peeled and julienned
Granny Smith apple, 1, peeled and juilenned
Celery, 1 stalk, thinly sliced
Spring onion, 2, trimmed and washed and thinly sliced
Radishes, 3, julienned
Sesame seeds, 3 tbs, toasted
Coriander leaves, 1/4 cup, thoroughly washed, finely chopped
Do
Add lemon juice, ginger and olive oil to a small bowl. Whisk. Season to taste with salt and pepper
Add sweet potato, apple, celery, spring onion, radishes, sesame seeds and coriander.
Drizzle dressing over the salad. Toss to combine and season with salt and pepper.
Serve
