Simple Dhal

1 red onion, quartered
3 cloves garlic, peeled
1 5cm piece of ginger, peeled
1 green chilli, topped and tailed and deseeded
1 cup red lentils
1 1/2 cups water
1 tsp cumin
1/2 cup coriander leaves and stems, washed thoroughly and chopped
1 lime

Process onion, garlic, ginger and chilli in the food processor until well chopped.

Heat 1 tbs neutral tasting oil (grape seed works), in a saucepan on medium heat.

Add onion, garlic, ginger and chilli, fry for 10 minutes until soft.

Add cumin, fry for 1 minute or until aromatic.

Add lentils and water, turn down to low heat and simmer for 15 minutes or until the lentils are soft, more water may be needed if lentils absorb the water quickly.

Allow to cool.

Once cool, add lime juice to taste and coriander.

This works with rice, greek yoghurt and naan.

Try with 200ml coconut milk added and reduce water by 100ml.
