Addictive Asparagus

100g short cut bacon, diced

1 tbs olive oil

1 tbs (15g) butter

450g asparagus, woody ends trimmed and sliced into 5 cm pieces on the bias (at a sharp angle)

1 cup leek, thinly sliced (white and pale green parts only)

2 cloves garlic, crushed

zest of 1 lemon

1 tsp orange zest

2 tbs pine nuts

1 tbs italian parsley, chopped

salt and freshly ground black pepper

saute bacon in oil in a large non-stick frying pan, over medium heat, stirring frequently, until crisp and lightly golden.

add 1 tbs butter to pan.

add asparagus pieces and leek and saute until asparagus is tender crisp, 3-4 minutes.

add garlic, lemon and orange zest, toasted pine nuts and parsley and saute for about 1 minute, until fragrant.

season to taste with freshly ground pepper and salt.

serve immediately.
