Chickenless Chow Mein

1 garlic clove, crushed

2 spring onion, washed and tailed, finely chopped, use white part only

1/2 tbs grated ginger

1 packet chow mein noodles, steeped in boiling water for 4 minutes

1 cup chinese cabbage (finely chopped)

1 tsp sesame seeds, toasted

splash sesame oil

splash soy sauce

1/2 cup chicken stock

neutral-tasting oil, grapeseed works well

add 2 tbs oil to a wok or large frying pan, fry softened and drained noodles on very high heat until they become crispy but not squishy. remove from the frying pan and place on a serving plate.

stir through soy sauce, sesame oil and sesame seeds.

in the same frying pan, gently fry garlic, garlic and shallots in oil for 1 minute or until aromatic.

add cabbage and saute until soft.

add chicken stock and simmer for 3-4 minutes.

return noodles to the pan, mix well to combine and serve.
