Pan Fried Fish

5 flathead fillets, must be very high quality

2 cloves garlic, crushed

60g unsalted butter

kosher salt

olive oil

lemon wedges to serve

2 tbs plain flour

dip the fish in flour to lightly coat.

heat oil in a frying pan on medium high heat.

place fish in the frying pan and cook on the first side for 3 minutes.

flip over and cook for 3 minutes or as desired.

while the fish is cooking, melt the butter in a saucepan.

once melted, add garlic and trasfer to a small bowl.

when the fish is cooked, drizzle garlic butter and a sprinkle of salt over each piece.

serve with lemon wedges, green beans and boiled potato.
