Peach and Ginger Salad

3 fresh peaches, these must be ripe

3 tbs preserved gingner, sliced

ground black pepper

1/2 lemon, juiced

1 tbs ginger syrup

2 tbs olive oil

1 tbs flat-leaf parsley, finely chopped

scald, skin and slice the peaches (after removing the stones)

mix with the ginger and spoon into a serving bowl.

mix the seasoning with the lemon juice and ginger syrup and whisk in the oil until the mixture thickens.

spoon the dressing over the fruit.

dust with the parsley.
