Peas Stewed with Shallots and Garlic
Buy or find
French shallot, 1, peeled and chopped
Peas, 1 cup, frozen or fresh
Garlic, 1 clove, finely diced
Chicken stock, 2 tbs
White wine, 1 tbs
Unsalted butter, 20g
Olive oil, 1 tbs
Salt and pepper to taste
Do
Sauté french shallot in butter and oil, and pepper and salt if permitted for 5 minutes.
Turn down heat to medium low.
Add peas when the pan has cooled.
Sweat the shallot mixture on very low heat for 10 minutes.
Add the peas, stir.
Add the wine and stock.
Simmer until the liquid has evaporated.
