Pizza Variation

Forget the pizza stone here! Perhaps, jury is still out

1 quantity pizza dough (use either Lauke pizza mix in bread machine on setting 22 or the bread machine recipe)

1 quantity easy italian tomato sauce (chunky version), gently crushed with a potato masher

6 button mushrooms, finely sliced

1/4 white onion, very finely sliced

1/2 red capsicum, very finely sliced

1 cup mozarella cheese, grated

1/3 cup cheddar cheese, grated

1/4 cup parmesan cheese, grated

grapeseed oil

extra virgin olive oil

basil oil *

preheat oven to 180 degrees celsius.

make pizza dough according to instructions and allow dough to rise for about 30 to 60 minutes.

divide dough into 3 balls and place each ball one at a time onto a floured piece of baking paper and place another sheet of baking paper of the dough and roll with a rolling pin until it matches the shape of the baking tray.

place the dough on the tray and spoon over a generous amount of tomato sauce.

place 1/3 of the onion over the sauce.

place 1/3 of the capsicum over the sauce.

place 1/3 of the mushroom over the sauce.

sprinkle 1/3 of each of the cheese over the base, sauce and vegetables and allow to sit for 30 - 60 minutes.

repeat with the remaining dough.

bake in the oven for 30 minutes or until the base is crisp and the cheese is melted and golden.

serve at the table with a bowl of basil oil which you can drizzle over each pizza according to taste.

try this without some or all of the vegetables, it also works.

1 tbs basil leaves, very finely sliced

3 tbs extra virgin olive oil

combine the basil with the oil and allow to sit for at least an hour.

remove the basil from the oil if there is any left after your meal and store in an airtight container in the fridge.
