Pork Mince Fried Rice

Buy or find

Pork mince, 500g or 500g Quorn mince for vegetarians
Spanish onion, 1, cut into wedges
Brown onion, 1, cut into wedges
Carrot, 1 cut into battons
Broccolni, 1 bunch, chopped into 3 cm lenghts
Ginger, 1 tsp, cut into micro dice
3 Eggs,
Tofu, flavoured, 1 packet, cut into fingers and fried
Sesame seeds, 1 tbs
Curry powder, 1/2 tsp, can add a little more
Cooked jasmine rice, 1 1/2 cups
Peas, frozen, 1/2 cup optional
other veggies such as cabbage, green beans
Lime, 1/2, juiced
Coriander, 1 bunch, washed and chopped
Caster sugar, 1 pinch

Fry onion in oil until soft, add the carrot and broccolni, stir fry until soft.

Add the pork, and stir fry until cooked.

Add the ginger.

Add the eggs, and stir scramble in the centre of the frying pan. No need to beat eggs before adding to the frying pan.

Add the rice and other veggies and stir fry until cooked.

Add sesame seeds and coriander.

Add the lime juice and sugar.

Serve with soy sauce, chilli and chilli sauce.
