Potato, Garlic and Thyme Bake

Unsalted butter, melted
Red royal potatoes, 1 kg, thinly sliced, do not peel
Garlic cloves, 2, crushed
Fresh thyme leaves, 1 tbs

Preheat the oven to 200 degrees celsius.

Grease a 20cm ovenproof pan or cast iron skillet with a little melted butter.

Pat the potato slices dry with paper towel and place in a large bowl.

Add the garlic, thyme, remaining butter and salt and pepper to taste. Season and gently toss to combine.

Arrange the potato mixture in layers in the pan or skillet.

Press down firmly to shape.

Bake for 50-60 minutes or until the top is golden brown and the potato is tender.

Cut into wedges to serve.

To prevent the garlic from burning, I often reserve 1/4 of the sliced potato and do not add this to the butter mixture. I add these plain potato slices to the top of the pan and pour over a little more butter.
