Red Onion Salsa

Red onion, 1, diced
Lime juice, 2 limes
Coriander leaves, 1 tbs, washed and finely chopped.
Salt to taste

Place the onion in a small bowl.

Cover the onion with lime juice and leave to sit for 2 hours.

Strain the onions in a colander, collect the lime juice to use elsewhere.

Return the onion to the bowl and add the coriander and stir to combine.

Add salt to taste.

Serve with your favourite Mexican food.
