Roasted Potato Skins with Garlic Butter
1 KG Carisma Potatoes
100g butter
1 clove garlic, peeled and crushed
Preheat oven to 200 degrees celsius (fan-forced).
Place potatoes on a baking tray and pierce them with a fork to prevent steam build up during baking.
Bake for 1 hour, turning occasionally.
Set aside to cool for 10 minutes in the strainer.
Hold onto the potatoes, once at time and peel the skin.
Place the potato in the strainer and the skins in a bowl.
Repeat with the remaining potatoes.
While the potatoes are cooking, combine the garlic with the butter.
Using a knife, spread the garlic butter over the potatoes and eat as a snack or a side vegetable.
You can use the potato for gnocchi or mashed potato.
