Scrambled Eggs on Turkish with Avocado and Lemon
2 eggs, broken and whisked with a fork
2 slices of turkish bread, toasted
1/2 an avocado
lemon juice
dijon mustard
unsalted butter
salt and pepper to taste
Heat, the butter in a frying pan over medium heat. Add the eggs and stir consistently until scrambled
Meanwhile, smear one of the slices of toasted turkish bread with avocado. Squeeze lemon juice to taste. Add salt and pepper to taste.
Place the egg on top of the avocado.
Lightly spread a small amount on dijon mustard on the other slice of turkish bread. Place this slice of bread on top of the egg and enjoy!
You may want to add a small amount of crumbled feta cheese or another favourite cheese of yours, over the egg before placing the turkish bread lid on top.
This is also great with a smear of vegemite on the toast.
