The Ultimate Pulled Pork
2KG boneless pork shoulder without skin
1 tsp olive oil
Spice Blend
1/8 cup kosher salt
1/2 cup brown sugar
1 tsp ground fennel seed
1 1/2 tsp cumin seeds
1/4 cup sweet paprika
1/2 tbs dried oregano
1/2 tbs chilli flakes
1 tsp mustard powder
1/2 tsp ground celery seeds
1/2 tbs ground allspice
1 tsp ground ginger
1 shallots, peeled and ground into a paste
1 tsp ground black pepper
Preheat the oven to 130 degrees celsius (fan-forced)
Using a sharp knife, create some slits on the pork, on both the top and bottom.
Poke some of the spice blend into the slits made in the pork.
Rub all but 1 desert spoon of the remaining spice blend into the outside of the pork shoulder.
Place the pork shoulder on a baking dish.
Drizzle 1 tsp olive oil over the pork.
Place in the oven and roast for 5 hours or until the pork is tender and can easily be separated with a fork.

1/2 cup tomato sauce
1/4 cup molasses
1/8 cup apple cider vinegar
1/2 tbs tabasco
1/8 tsp ground allspice
1/8 tsp ground cinnamon
1/8 tsp ground mace
1/8 tsp ground black pepper
1/4 tsp chilli flakes
1/4 tsp sweet paprika
Combine all of the sauce ingredients in a saucepan and simmer for 5 minutes. Store in an airtight container until needed.
