Turkish Quinoa Salad

1 cup white quinoa, cooked as directed

1 cup pearl couscous, cooked as directed

¼ cup sesame seeds, toasted

¼ cup slivered almonds, toasted

¼ cup pepita seeds

¼ cup currants

½ cup dried cranberries

1 cup flat leaf parsley, chopped

1 cup mint, chopped

1 cup coriander, chopped

dressing

1/3 cup olive oil

pinch salt, pepper

1 tbsp honey

¼ lemon juice

in a large bowl, place quinoa, couscous, sesame seeds, almonds, pepita seeds, currants, cranberries, parsley, mint and coriander.

mix well

combine dressing ingredients and whisk or shake

pour over dressing

toss to coat
