Vegetarian Burger Patties
part a
1 tsp olive oil
1 diced onion
2 garlic cloves, crushed
salt and pepper to season
1 cup mushroom
part b
1 cup toasted walnuts
1 can black beans (rinsed and drained)
handful of breadcrumbs
1 cup brown rice, cooked
seasoning
3/4 cup bread crumbs
1 tsp cumin powder
1/2 tsp sweet paprika
1 egg
pinch of salt and pepper
1 tbs dijon mustard.
Olive oil for frying
Process part a in a food processor. Tip into a large mixing bowl.
Process part b in a food processor. Tip into the bowl with part a.
Mix in the seasoning.
Heat the oil in a frying pan. Take a large dessertspoon of the mixture and drop it into the frying pan. Quenelle, using two large spoons. These burger patties are delicate. Take care when flipping.
