Amish Chocolate Chip Oatmeal Cookies
115g unsalted butter
2/3 cup caster sugar
2/3 cup packed dark brown sugar
2 large eggs
1/2 tsp vanilla extract
1 cup plain flour
1 tsp baking powder
1/4 tsp ground nutmeg
1 tsp ground cinnamon
2 cups quick-cooking rolled oats
1 cup milk chocolate chips combined with 1 cup dark chocolate chips
preheat the oven to 180 degrees celsius.
ligthly grease a 23cm by 33cm baking pan and set aside.
in a large bowl, beat the butter, sugars, and eggs until fluffy.
stir in the vanilla.
blend in the flour, baking powder, nutmeg, cinnamon and oats with a wooden spoon.
blend in 1 cup of the combined chocolate chips.
the batter will be thick, best to do this by hand as its often too thick for an elecric mixer.
once the mixture is well blended, spread with a spoon into the prepared pan.
sprinkle the top with the remaining 1 cup of combined chocolated chips.
bake until a butter knife tested in the centre comes out clean, about 30 minutes.
allow to cool in the baking tin.
