Breakfast Couscous
Orange juice, 1/2 cup/1125ml, freshly squeezed
Water, 1/3 cup
Cinnamon, 1/4 tsp, ground
Couscous, 1/2 cup
Dried apricots, 2 tbs
Greek yoghurt, 125 ml
Honey, 3 tbs
Slivered almonds, 2 tbs, toasted
Combine the orange juice, water and cinnamon in a small saucepan and bring to a simmer.
Combine the couscous and apricots in a small heatproof bowl and pour over the hot orange juice mixture. Cover the bowl with a plate or plastic wrap and set aside for 5 minutes or until the liquid is absorbed.
Combine the yoghurt and honey.
Separate the couscous grains using a fork.
Serve with honey yoghurt and almonds.
