Cheat’s Chocolate Almond Croissant
4 croissants (non fresh croissants work best), sliced but leaving a hinge (a bread knife works best)
icing sugar, for dusting
50g plus 1 tbs caster sugar
2 tsp vanilla extract
50 g ground almonds
50-100g flaked almonds
1/4 tsp salt
40g unsalted butter, at room temperature, roughly chopped
2 eggs, at room temperature.
1 egg, at room temperature, lightly whisked
1/4 cup dark chocolate chips
