Peanut Butter Balls

1 cup chopped walnuts
1 cup dates (medjool work best)
1 cup crunchy peanut butter
1 cup icing sugar
dark chocolate for dipping

In a food processor, blitz the walnuts until lightly ground, remove walnuts from processor.

Blitz the dates in the food processor until lightly chopped.

Add the peanut butter, sugar, walnuts and dates to the bowl of a cake mixer and mix on low until well combined.

Shape the dough into tablespoon-sized balls and place on baking paper-lined cookie sheets in the fridge.

Meanwhile, warm some chocolate in a double boiler on the stove until just melted.

Dip the balls in chocolate and place on a waxed paper-lined cookie sheet and place in the fridge to harden. I dip only half a ball, to make it easier to allow them to harden without sticking to the paper.

Refrigerate until set.
