Triple Layer Oreo Brownies

Donna Hay Brownie Packet Mix (Molten Chocolate Chunk Brownie)

Choc Chip Cookies Packet Mix (White Wings works best)

2 packets of Oreo cookies

Preheat the oven to 160 degrees celsius (fan-forced).

Line a square brownie tin (24cm x 24cm) with baking paper.

Make the cookie dough as per instructions on the box and spread on the bottom of a baking tray.

Place Oreo cookies over the cookie dough.

Make the brownie mix according to the packet instructions and spread on top of the Oreos. I find it easiest to spoon dollops of the batter over the Oreos and then with wet hands smooth the batter over the Oreos. You may need to wet your hands a few times to do this.

Bake according to the brownie instructions.

Allow to cool for 2 hours in the tin.

Remove from the tin and cut into squares.

These are best if not overcooked. Really tune into the last 5-10 minutes of cooking to make sure the brownie layer is not getting dried out and too crunchy.
