Very Very Quick Tomato Pasta Sauce

2 400g cans San Marzano tomatoes
1/2 tsp sugar
1 -2 tbs tomato paste
1-2 small clove garlic
1/4 cup fresh basil leaves, washed and very finely chopped

Push the tomatoes (and their juices through a sieve into a bowl. You want to separate the pulp and seeds from the rest.

Just before serving, add the sugar, tomato paste, garlic and basil leaves.

Heat the sauce in the microwave for 1 minute, spoon over your pasta.

Alternatively you can heat the sauce in a cast-iron skillet with lid off at 210 degrees celsius (fan-forced) for 10 mins, then remove from oven and cover until needed. 30 minutes resting time works best.
