Creamy Mushroom Pasta

Buy or find
Onion, 1, diced
French shallots, 4, sliced
Garlic clove, 1, crushed
Mushroom, 250g, sliced
Dried thyme, to taste
White wine, 1/3 cup
Cream, 1 cup
Chives, 1 bunch, sliced

Fry mushroom and pepper and sat on high heat in oil. Add mushroom and thyme to onion mix. Pour on some

White wine and reduce then cream then reduce then wine then reduce and cream reduce wine reduce. Add spring onion and chives. Serve with pasta cheese and chilli flakes

Caramelise onion and shallot in small amount of butter and oil.

Add garlic and fry for 30 seconds, make sure the garlic does not burn.

Fry mushroom in oil and butter in a separate pan.

Add the mushroom to the onion mix and stir to combined.

Add wine and simmer until alcohol has evaporated.

Add cream and simmer on very low heat for 10 minutes.

Serve with pasta, chives, chilli flakes and parmesan cheese.
