Quick Refried Beans
Baked beans in tomato sauce, 1 can, drained and rinsed to remove the sauce
Red onion, 1 diced
Dried cumin, a pinch
Dried coriander, a pinch
Chilli powder, a pinch
Sweet paprika, a pinch
Salt and pepper to taste
Tomato paste, 3 tbs
Olive oil
Fry the onion in olive oil over medium high heat until soft, about 5-8 minutes.
Add the garlic and cook for 10 seconds.
Add the remaining ingredients and cook over medium heat for 5 minutes.
Mash 3/4 of the beans.
Add a dash of lime juice and stir to combine.
Serve with your favourite Mexican food.
