500 cups small pasta such as pennette or maccheroni
2 desiree potatoes, cut into 1-2 cm dice
2 brown onions, finely sliced
2 granny smith apples, peeled and cored and finely chopped.
2 dried cloves
3 slices of ham, finely chopped
30g unsalted butter
cheddar and parmesan cheese to serve
add 1/2 of the butter to a frying pan and add the onions and fry on medium heat, stirring occasionally until the onions are caramelised, about 15 minutes.
place the remaning butter and apples in a saucepan, add 1/3 cup water, add the cloves, cover and simmer on low to medium heat, until the apples are soft, about 15 minutes. mash the apples once cooked.
meanwhile, cook the pasta according to the packet instructions.
pasta should be cooked in water as salty as the sea.
when the pasta has 8 mintues of cooking time letft on the clock, add the potatoes.
cook until timer goes off.
drain and rinse the pasta and potatoes and transfer to a serving bowl.
place the onions in a serving bowl.
place the applesauce in a serving bowl.
bring all serving bowls and ham to the table. everything, except the ham, should be served hot or warm.
serve at the table with parmesan and cheddar.
