Beef and Balsamic Ragu

1 tbs olive oil

2 red onions, cut into thin wedges

1 tbs finely chopped rosemary leaves

2 garlic cloves, crushed

500g beef mince

1/4 cup tomato paste

400g can crushed tomatoes (Annalisa brand works)

1 cup salt reduced chicken stock

1 tbs balsamic vinegar

325g orecchiette pasta

1/2 cup grated parmesan

heat oil in a large saucepan, over medium - high heat, add onion and cook, stirring occasionally until tender and starting to caramelise, about 10 minutes.

add rosemary and garlic and mince, cook for 5 minutes, stirring with a wooden spoon to break up lumps, or until mince is browned.

add tomatoes, stock and vinegar and bring to the boil.

reduce the heat to medium and simmer, stirring occasionally, for 15 minutes or until sauce thickens.

meanwhile, cook pasta according to the packet instructions. (pasta cooked in water as salty as the sea works well.)

when pasta is cooked, drain, rinse and return to the pan, add sauce and stir to combine.

sprinkle with parmesan and serve.

this works served with sliced baguette or italian bread.
