Butter Chicken Kofta

Kofta ingredients

750g chicken mince

1 onion, peeled and quartered

1 tsp salt

1 cup breadcrumbs

1 green chilli, topped and tailed, seeds removed

3 tbs coriander, washed and roughly chopped

1 thumb sized piece of ginger, peeled and quartered

1 tsp garam masala

1 egg, lightly beaten

Butter chicken sauce ingredients

1 400g tin chopped tomatoes (Annalisa brand works)

3 cloves garlic, peeled and crushed

2 thumb sized pieces of ginger, peeled and grated

1 tsp turmeric

1 tsp sweet paprika

1 tsp kosher salt

1 tsp garam masala

1 tsp ground cumin

120g unsalted butter

120ml thick cream

3/4 cup coriander, washed and finely chopped

Kofta recipe

preheat oven to 200 degrees celsius

place chilli, onion, garlic and ginger and process until finely chopped.

combine chicken, onion mixture, egg, garam masala, breadcrumbs and salt.

mix well using your hands.

roll mixture into balls the size of a large marble, using wet hands.

place chicken balls on a baking tray lined with baking paper.

bake in oven for 18 minutes or until golden

Butter chicken sauce recipe

pour neutral tasting oil (grape seed works)into a large frying pan and heat pan on medium heat.

add garlic, ginger, turmeric, sweet paprika, kosher salt, garam masala, cumin and fry until aromatic, around 1 minute.

add tomatoes, simmer for 15 minutes.

blend in a blender or food processor with 1/3 cup hot water until smooth.

add butter, cream and some extra garam masala and heat until warmed through.

add cooked chicken kofta to frying pan, heat until warmed through

add coriander

serve with rice

Alternative Sauce for chicken Kofta

1 tbs olive oil

3 tbs korma curry paste

400g can chopped tomatoes (Annalisa works)

200ml coconut milk

200ml chicken stock

2 tsp brown sugar

1 tbs lemon juice

heat oil in a frying pan over medium heat.

add curry paste and remaining ginger.

stir for 1 minute until fragrant.

add tomatoes and cook for 2 minutes.

add coconut milk, stock and sugar.

bring to the boil.

reduce heat to medium and simmer for 5 minutes.

add kofta

simmer further 20 minutes.

stir in lemon juice to taste.
