Classic Stir-fried Chicken with Basil

4 garlic cloves

1/2 tsp dried chilli flakes

1 large red chilli, deseeded and thinly sliced

1/4 tsp kosher salt

2 tbs light flavoured oil, grapeseed works

500g chicken mince

400g green beans

1 tbs dark soy sauce

1 desert spoon caster sugar

small handful Thai basil leaves or regular basil leaves

pinch ground white pepper

place the garlic, chilli flakes and salt in a motar and pestle and grind until it forms a paste.

heat a large non-stick frying pan over medium-high heat.

add the oil and garlic paste and sliced chilli (if using)and cook, stirring for 30 seconds oruntil the garlic starts to colour.

add the mince and cook, stirring, for about 3 minutes or until starting to brown.

add beans and cook for a further minute.

add the soy sauce and sugar and stir-fry for a further 30 seconds.

remove from heat, stir in the basil leaves and white pepper.

serve immediately with steamed rice and or noodles.
