Lucia’s Maccheroni Cheese
1 tbs unsalted butter
2 cups maccheroni
2 cups chicken stock
2 tbs pouring cream
1 -2 cups cheddar cheese, grated
extra butter
place butter and a pinch of salt and ground black pepper in a medium-sized saucepan on medium heat and melt.
once the butter has melted, add the maccheroni to the saucepan and stir to coat and become slightly golden.
add enough chicken stock to just cover the maccheroni, stir and add more stock once absorbed.
continue until you have used up all of the stock.
when the pasta is almost cooked, add half of the cheese and stir, remove from heat.
add the remaining cheese and stir.
add cream and stir, add extra butter (1 tsp) and stir.
season with salt and pepper.
serve with parmesan cheese.
