Crumbed Zucchini

2 zucchini, washed
1/2 clove of garlic, peeled and crushed
1 egg, lightly beaten
1 cup breadcrumbs, you might need more breadcrumbs depending on the size of the zucchini.
olive oil for frying

Thinly slice the zucchini lengthwise.

combine the egg with the garlic and mix to combine, season with salt and pepper. (Garlic can be ommitted if preferred).

Dip each slice of zucchini in the egg mixture.

Press each egg coated zucchini slice into the breadcrumbs and flip over to coat both sides with crumbs. Do this one slice of zucchini at a time.

Fry the zucchini in olive oil in a frying pan over medium-high heat until golden brown on each side.

Fry in a generous amount of oil but do not deep fry. The crumbs absorb the oil and you will need to top up the oil throughout the cooking process. A combination of grapeseed and extra virgin and plain olive oils works well, remove from heat mid way through frying the second side then return to heat for a minute or two. the zucchini should caramelise slightly.
