Dreamy Coleslaw
2 cups shredded green cabbage
1 cup shredded red cabbage
1 cup Hellman’s mayonnaise
2/3 cup dijon mustard
juice of 1/2 lemon
2 tbs fresh dill leaves, washed and chopped
In a bowl, combine mayonnaise, mustard, lemon juice and dill in a bowl and whisk with a fork to combined well.
Place cabbage in a serving bowl, scoop dressing out of the bowl and tip onto the cabbage.
Cover and and leave out to allow flavours to develop and the cabbage to wilt. You can refrigerate after an hour.
Try this with the addition of 1/2 a granny smith apple, cut into thin matchsticks.
This works with chicken schnitzel sandwiches, burgers and cheese sandwiches.
