Salad Pizza
pizza bases
easy italian tomato sauce
2 tsp chopped fresh oregano, or 1 tsp dried oregano
70g feta cheese, crumbled
150g pizza cheese ( mozarella, parmesan and cheddar combined)
2 cups baby rocket leaves
2 tbs parsley leaves, washed and finely chopped
1/4 small red onion, thinly sliced, macerated in lemon juice
1/4 olive oil
1 tbs lemon juice
1 tsp dijon mustard
preheat the oven to 200 degrees celsius.
place the pizza bases on baking trays.
spread with tomato sauce and sprinkle with oregano, feta and pizza cheese.
bake until bases browned and cheese bubbling, about 12-15 minutes).
meanwhile combine the rocket, parsley and onion (removed from macerating lemon juice).
whisk together the oil, lemon juice and mustard and toss through the salad.
top the pizza with salad and serve.
Try this with dill in the salad dressing and use Castella feta cubes
