Fast Chicken Parmigiana

Buy or find
Chicken stir fry, 1 500g pack
Plain flour, 1/2 cup
Spice mix, Italian herbs, chicken stock powder, paprika
Tuuci pasta sauce, 1 quantity, don’t strain, leave the tomato and onion pieces in the sauce
Pizza cheese, 1 cup

Do

Place the chicken in a snap lock bag and beat with a rolling pin to reduce the thickness a little.

Combine the spices and flour and add to the bag with the chicken. Toss, to coat the chicken with flour.

Fry the chicken in olive oil on medium-high heat. You want to sear the outside but keep the insides under-done.

Preheat the oven to 180 degrees celsius, fan-forced.

Combine the chicken with the sauce and cover with cheese.

Bake for 20-30 minutes or until the cheese has browned.

Serve with red wine butter mushrooms and cubed potato or mashed potato.

Woolies schnitzel (uncrumbed) can also work if stir fry is not available or pieces are too small. Make sure you pound it well and cut into smaller pieces.
