Pasta With Creamy Spring Vegetables
Buy or find
Brown onion, 1, diced
Unsalted butter, oil 50g of each
Mushrooms, 150g, sliced
Baby spinach leaves, 200g, wilted in boiling water and squeezed out
Spring onion, 2 sliced
Basil leaves, handful, torn
Asparagus, 1 bunch, poached in small amount of salty water and retain water for later use
Cream, 1 cup
Pasta, 500g, cooked as per packed instructions
Do
Caramelise onion in butter and oil.
Fry mushrooms in a different pan in butter and oil, add pepper.
Add all vegetables and basil to frying pan and add cream, simmer for 10 minutes
And asparagus water if the sauce is a little stiff.
Serve with pasta, chilli flakes and parmesan
