Fattoush

2 pieces of lebanese bread, coated in oil and grilled in oven

250g baby tomatoes, washed and halved

1/4 red or brown or white onion, very finely sliced

2 lebanese cucumbers, washed and diced

2 cups iceberg lettuce, washed and torn

1/2 cup flat-leaf parsley, washed and finely chopped

1/2 cup fresh mint leaves, washed and finely chopped

1/2 garlic clove, crushed

1/3 cup extra virgin olive oil

2 tbs red wine vinegar

kosher salt and freshly ground black pepper

combine all ingredients except, garlic, oil and vinegar.

mix garlic, oil and vinegar in a jar with a lid and shake well.

pour over dressing.

sprinkle with torn lebanese bread.

this works with grilled or fried haloumi on the side.
